
Soft the gelatin in ice cold water and place aside.
Put milk, cream, sugar and honey in a small pot and bring slowly to boil, stirring until sugar and honey are dissolved, set aside.
Drain and squeeze the gelatin leaves of all the excess water, add to the cream mixture and dissolve
Pour into your glass or mould and refrigerate for 4 h.
400 ml cold fresh cream
120 ml fresh whole milk
3 gelatin leaves
90 gr manuka honey
20 gr brown sugar
