
Preheat oven to 170 degrees.
To make the crust, combine all ingredients except nuts and mix well. Fold in nuts.
Season fish on both sides with salt and pepper. Spread a layer of crust on top of each fillet. Place on a well-oiled baking tray or use baking paper.
Bake 8 to 12 minutes (if fish is cooked through but crust is not yet golden, set oven on broil to brown crust ) it is always better to keep the fish slightly under cooked.

8 hapuka fillets, about 80 g each (or any similar fish fillets)
Salt and pepper, to taste
salt and 2 cracked black pepper to taste

1/3 cup multiflora honey
1 tablespoon minced fresh thyme
1/2 tablespoon Dijon mustard
2 cups crushed toasted macadamia nuts
