Bottled Beetroot in Honey
Method
Bring to the boil cider vinegar, water and salt. Add honey and stir until dissolved. Pour hot liquid over prepared beetroot in jars. Seal. Makes 3 to 4 large jars.

4 cups cider vinegar
1 tablespoon salt
2 cups water
700g Arataki Honey
